  • 3 tablespoons fish sauce
  • 2 tablespoons tamarind paste
  • 1 tablespoon palm sugar (or brown sugar)
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili paste (optional)


  1. Soak the rice noodles in cold water for about 30 minutes until they are soft and pliable. Drain and set aside.
  2. In a small bowl, whisk together the fish sauce, tamarind paste, palm sugar, rice vinegar, and chili paste to create the Pad Thai sauce. Adjust the flavors to your preference by adding more sugar, lime juice, or chili paste as desired.
  3. Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the garlic and shallot, and sauté for a minute until fragrant.
  4. Add the tofu and shrimp (if using) to the wok and stir-fry until the shrimp turn pink and are cooked through.
