  • 1/2 cup shrimp, peeled and deveined (optional)
  • 2 eggs, lightly beaten
  • 1 cup bean sprouts
  • 2 green onions, thinly sliced
  • 1/4 cup roasted peanuts, chopped
  • Fresh cilantro leaves, for garnish
  • Lime wedges, for serving

For the Pad Thai Sauce:

  • 3 tablespoons fish sauce
  • 2 tablespoons tamarind paste
  • 1 tablespoon palm sugar (or brown sugar)
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili paste (optional)

Instructions:

  1. Soak the rice noodles in cold water for about 30 minutes until they are soft and pliable. Drain and set aside.
  2. In a small bowl, whisk together the fish sauce, tamarind paste, palm sugar, rice vinegar, and chili paste to create the Pad Thai sauce. Adjust the flavors to your preference by adding more sugar, lime juice, or chili paste as desired.

  6. Add the soaked rice noodles to the wok and stir-fry for a few minutes until they are soft and well-coated with the sauce.
  7. Stir in the bean sprouts and half of the green onions, reserving the rest for garnish. Toss everything together until the bean sprouts are slightly wilted.
